the appliance repair dude said Wolf or Bluestar are noticeably higher quality than anything else. they use better parts down to screws and shit + he can source parts for ones regardless of how old.

our 20yr old Dacor has several burners that try to ignite constantly and can't get shit like a gasket to repair it.

The only caveat is that our viking has open burners and I fucking hate that. If anything spills it goes straight onto the electronics. We had an incident where a spill caused the ignition to stay on whenever any burner was on.

I've used induction before and if I just had to use electric that's what I would get. However, I absolutely hate electric. Man cooked for most of human history on open fire. That's the way to do it. Grilled food and food on open flame tastes better. Yeah, electric might be more precise or whatever, but it loses that special something that open flame has.

Blue star/lacanache are the best. La Cornue is better made but seem to have more issues. They also have a model called the 180. It’s the official range of XO. It’s like $60k. I bought a used one for pennies on the dollar.

Or just fix what you have. The boards are easy to repair, igniters are consumables and cheap. That’s how I got mine. Cheap used because people are idiots who can’t fix anything.

Pre-1998 have the piezo oven ignitors which are better. The best is an electric oven and gas range top. My 5 star (so old it’s what blue star used to be called). I like the French burners because they are easier to clean and you can get a massive burner as an option.

We call the repair guy and it is an almost $800 repair because apparently the metal knob holder broke so that would have to be replaced too and that involves taking the whole thing apart. The broiler doesn't work either. Then the wires apparently break down over time and for an over 15 year old appliance it seems like just replacing it might make more sense. I doubt it is the thermostat, it is likely the ignitor. They are $20 and can be replaced in 15 minutes.

Yeah, two kitchens. No, not kosher. The kitchen upstairs is the big "main" kitchen, the bottom kitchen is an "entertainment" kitchen. Viking stove downstairs has issues. Upstairs, they went dual fuel and have some Kitchenaid oven/microwave combo and a Viking LP stovetop.

Oh, and the big fridge upstairs is basically dead too (a Jenn-Air POS). Right now we're doing some reno work upstairs and are living downstairs.

i personally would have bought none of it

- cooktop: per prior post, multiple igniters clicking when gas is cranked up. parts difficult to come by.

- oven: looks like it's never completely closed because thermal padding/gasket slightly deformed over time

- warmer: dries food, IMO. maybe i'm doing something wrong

- microwave: works like any other, but LOL @ the $800++ or so price for this thing.

- hood: ok i guess, nothing special, it's a hood. knobs for the fan and the light feel flimsy though

I don't see any advantage to the open burners with my current Viking and they're a pain to clean. BlueStar does it right in that they have flame in the center of the burner as well. With Viking the flame is only going around the ring of the pots/pans anyway, just like a sealed burner.
