but like I don't use green onions and use tons of other spices that they don't, but nothing crazy. I would probably have less rice, wouldn't be super picky about the exact type of long grain and more beans and meat bc that's healthier and more filling. This is all likely heresy to New Orleans foodie fags who would insist on whatever ingredient, but I don't give a shit about them. I just want to make something cheap, reasonably healthy and filling that my kids will eat. The main point that factors into the actual taste of the recipe is that you're frying the onions, celery, bell pepper in the fat from the sausage along with a bit more oil. Between that and the beans and the rice soaking everything in it lets the sausage flavor permeate the whole dish but not take over. Pretty simple premise of salt, fat, heat, and add hot sauce for more heat and acid. But I've had great red beans and rice that were beans from a can and spiced with nothing more than salt, pepper, cayenne, cumin and a generic cajun spice like Tony Cachere's. Cut out the shit that's annoying and requires extra planning like soaking the beans and see if you can get it to taste good anyway. Half the point is ease and convenience.
