Getting ready for an AMAZING Fourth of July (TSINAH)

Today, I’m stopping at Costco to pick up some ribs, USDA prime brisket, and a few other sundries. Then, I’m stopping at a farmers market to pick up all the fruits & veggies. After that, I’m stopping at Publix to pick up the rest.
Tomorrow’s game plan is to smoke the brisket & prepare the potato salad, coleslaw, sliders (just forming them from a mix of equal parts ground sirloin, ground chuck, and ground brisket with some wagyu tallow added to increase the fat content), and slider buns (homemade brioche buns). I will also be brining the pork butt. On Monday, I’ll smoke the ribs and pork, and make the mexican street corn.
This is going to be 1800000 and I will be taking plenty of pics! |

In about an hour or two, I'll creep the temp up to 230 to progress the cook, then 250 until the fat has been rendered (around 170-180 degrees). Then, I'll take it out, place it on butcher paper, cover it in smoked wagyu tallow, and wrap it in the butcher paper. I'll continue smoking it at ~250 until the internal temp at the flat is about 205 and the point 200.
