CSLG Sushi Testing Night Photos - Volume 2 (CSLG)

My chef (and partner) and my Mongolian biker sous-chef prepared some 180 dishes on paper plates for us to try. The toro was probably the best I've ever had, and I am not a big fan of oysters, but he made some baked oysters that are OUT OF THIS WORLD. We also got some A5 wagyu beef, and 8 other types of fish (plus some tempora).
We just hired an alcohol consultant last week to help us with the permitting and 47 license. And we are meeting with the construction/health department permitting consultant on Tuesday. Target is 5-6 months to open with construction probably starting in about 2-3 months (we have to do all the plans and get those approved first). I'm getting super excited, brothers.
It's 180 to get to share this with my staff. I've opened up the world so much to these guys by taking them to world class restaurants and experiences. It brings me immense joy to share these things with others.
