Look, obviously seasoning to taste is the cr for most dishes. But there are some dishes where it's essentially impossible to season to taste.

Using the example of saffron - if you don't get enough of it into a risotto right from the start, you're basically fucked.

At some point you need to be starting from some sort of baseline measurement (either volume or mass). Mass happens to be superior a ton of the time.

The scale I have displays gram precision, and it's kind of maddening sometimes. I need 9g of salt for a dough. I pour onto the scale, get it up to 8g, add what certainly seems like at least a gram and the number doesn't fucking change
