History of Soybeans

Soybeans were grown first in America in the 19th century, and were not grown in Iowa until the 20th century. At first, soybeans were grown as feed for livestock (animals). Then, scientists discovered that the soybean had many uses for people. Then planting soybeans really took off!

how am i dodging it? thanks to subsidies and industrial monoculture farming practices we have a glut of soybeans, and the soybean industry has invested a lot of money to find various uses for soybeans and favorable regulations to overlook the problems of overconsumption of soy.

GC Megafood companies don't care about nutritional value or health and are more than happy to sell soy products with big markups or replace traditional ingredients with soy products to increase margins.

more people and health-focused regulatory regimes in EU and elsewhere make this hard to replicate anywhere outside of GC hellscape america.

based on a quick google search, seems like midwest soybean production really took root in WW2/postwar 50s, and by 60s reached a critical mass point when it became a leading ag export and soybean industry groups formed. 60s/70s was also when its direct consumption as tofu (as opposed to before when it was mostly used for livestock feed) and other products became popularized by, at the time, hippies.

so it wasn't a sudden switch, but a gradual process.

I think they are trying to paper over important inflection points by making it look like a slow, natural evolution. The 90s thing with "phytochemicals" was weird. That's briefly discussed in the third link. Though admittedly we had probably reached peak production by then.

Also not really discussed:l in those links: soybean oil. These articles make it sound like it's all about the protein.
